Glenn Lindgren: Coconut sure shows up a lot in Cuban desserts!
Jorge Castillo: Gee, I wonder why!
Glenn Lindgren: This recipe for coconut cookies includes corn flakes. The flakes really make for a crisp and crunchy cookie.

Chewy coconut cookies with a corn flake crunch.
INGREDIENTS:
2 egg whitesBeat the egg whites until creamy. Add the sugar little by little and follow with the rest of the ingredients until all is well mixed.
Drop by teaspoonfuls on a greased cookie sheet. Bake 15 to 20 minutes. Remove from cookie sheet immediately after they come out of the oven.
Note: Sometimes I drizzle melted chocolate over the cookies.
